A very awesome Four Pillars Gin & Drinks Lab is coming to Sydney in 2020.
We are delighted to let our friends, family, fans and followers know that from some time early in 2020 following planning approval, Four Pillars Gin will have its very own home base in Surry Hills, Sydney.
The Four Pillars Gin and Drinks Lab will be located at 410 Crown Street in the gorgeous 1930s Bussell Bros. building right adjacent to one of our favourite pubs, The Dolphin, across the road from one of our favourite bars, Bartolo, and diagonally opposite our favourite ricotta pancakes at bills. We already feel right at home.
We will be bringing our 70L Carl still ‘Eileen’ up from Healesville to be on the premises allowing us to make small batches of perfectly crafted gin with groups large and small. In addition to Eileen moving in, our Creative Director of Drinks, James Irvine, will also have the most outrageously specced bar to showcase all the stupendous things you can do with Four Pillars Gin as a base.
James (and the team) will be inviting all our bartending friends from Australia and around the world to join us. We will also have a small bar license (pending approval), meaning we will be creating great drinks a few nights a week for gin lovers in Sydney in need of the perfect gin fix before hitting the town.
And while we are at it, we will also have a retail store selling all manner of Four Pillars Gin products including our ever-growing range of Made From Gin products like marmalade, Gin Pig Salami and Hunted & Gathered chocolate in addition to bar kits, t-shirts, gin books and drinking miscellany. And once Eileen is in the house, we will have space for masterclasses, corporate events, tastings and gin gatherings for one and all.
It’s going to be a lot of fun and as we get closer to an official opening date, we will be able to share a few more surprises we have in store. We are delighted to be working with the crew at Amber Road on design and interiors and we will also have some new human resources to announce soon who will bring the space to life.
While on the subject of new homes, we are also pretty pumped to announce that we will be starting work on the long-planned extension to our Healesville home in 2020. We are working with the rather fabulous Breathe Architects to bring to life a doubling of our hospitality space, a new production area, some increased catering options and a gorgeous outdoor gin garden which together will make our spiritual home the very best place in Victoria to while away an afternoon or evening.
