  • 30ml Rare Dry Gin
  • 5ml Aperol
  • 5ml Tasmanian mountain pepper syrup*
  • 5 mint leaves
  • Splash of Daylesford & Hepburn Pink Grapefruit


Add all ingredients to a tall glass and mix together. Garnish with a straw and mint sprig. You can use simple syrup for a more basic (but still delicious) drink.

For the Tasmanian mountain pepper syrup...


  • 100g Tasmanian pepper leaf
  • 1kg sugar
  • 1L boiling water


Combine Tasmanian pepper leaf and sugar in a container. Pour over boiling water and stir. Allow to cool, and then strain.
