Star anise is without doubt the most intense spice we use.

We source ours from Vietnam and the aromatics are insane. When we open a small container of star anise the entire distillery fills with aromas of fresh liquorice, sarsaparilla and pastis!

Finding the balance of this spice took some time. Too much and it dominated everything, too little and we lost palate weight.

But once you have that perfect balance, it creates a richness that is hard to recreate with any other spice.
