Yarra Valley and Melbourne water is among the very best in the world, in the top five urban water supplies. It is alkaline (pH regularly around 7.2), low in sodium (10mg/L-60mg/L) and delicious, even straight from the domestic tap.
One of the keys to this fabulous water is Melbourne's protected water catchment areas, covering over 157,000 hectares of old growth mountain forests. When it rains (it pours) the water filters naturally through eucalyptus foliage, ferns and dense forest floor, meandering into rocky streams that further filter it, before flowing into catchment dams.
The unique flora and soil quality ensures the water is alkaline with a crystal clear finish and a crisp, fresh sweet taste.
Once we have this superb water at the distillery we triple filter it to further ensure the utmost quality and clarity, before adding it to our gin in the final bottling.
