Sourced from the luscious of tropics Byron Bay NSW, the tart caviar-like flesh of the finger lime gives rise to lively Asian aromatics of coriander, star anise and cinnamon used in the gin distillation process.
This lime (is finger sized, if you didn't catch that) is native to the tropics of far Eastern Australia and has been the subject of many studies in the past twenty years aiming to capture and recreate the true essence of the Australian bush.
