The big news on the distilling front is that we are just about set to release Solera No_5 of our Barrel Aged Gin. This gin comes from our original solera, and some of the barrels have had gin in them since Christmas 2013, so it’s an incredibly complex, rich blend. The gin will be released next week – it will be nice to have the Barrel Aged back in the family after quite a hiatus.
We’ve had plenty of visitors over the past couple of weeks which is always fun. The Gin Palace team came out to Healesville and spent a day with me distilling a special batch of gin with Eileen. It was a great day, and the gin we made looks really good. Melburnians keep an eye out - you might be able to find some at Gin Palace soon.
We also had the boys from Applejack Hospitality Group in Sydney down for a visit. I showed them around the distillery, introduced them to Wilma and Jude, and we of course tasted plenty of gin.
And despite the chilly weather the distillery has been really busy the past couple of weeks. I guess school holidays probably has something to do with it, but you’d think it was the middle of peak season here at the moment!
I am off to the US this weekend for a two-week trip, finishing at Tales of the Cocktail with Sam. Stu got an epic case of FOMO and booked a last minute trip to Tales as well, so look out New Orleans!
