Cassia basically smells like Christmas.
This spice is made from the bark of East Asian trees related to the "true cinnamon" (Cinnamomum Verum) of Sri Lanka. It is harvested from the inner bark of these trees, where the outer bark is removed and the inner shaved off, then dried.
Our cassia comes to us India in a pelleted form, ready to be added to the pot with the other dry botanicals.
Cassia adds a distinct richness to our gin and helps bring the other spices together.
