The Angelica plant has a rich history as a herbal medicine.
Native to most of Scandinavia and northern Europe, it continues to be used as a flavouring and bitter-ing agent in various drinks including vermouth and Charteuse.
We use the root of the plant, sourcing it from the Netherlands. It has a very earthy, mushroom-y, woody smell - kind of like an old barn.
Angelica is another one of those 'functional' botanicals. It acts as a fixative during our distilling process, holding the other aromatics and flavours in place. It also adds to the soft texture of the final gin, along with a very very subtle bitterness.
