Four Pillars Gin and Santamania Destileria Urbana have a lot in common (our stills, our commitment to the craft of distilling, and to innovation). So they were the obvious choice for the first gin in our collaborative Distiller Series - and due to the incredible response it received last year, Cam and Javier have reunited to create the second release of Cousin Vera's Gin.
This time they crafted our collaborative Yarra-style Spanish gin in Wilma and Jude at our Healesville distillery. Cousin Vera’s Gin (once again named for Wilma’s transcontinental cousin) brings together Spanish botanicals and native Australian ones, with a neutral Australian grape spirit base. Yes, Javier brought over some botanicals from Madrid - including some white pepper that is insanely good!
The aromatics are bright, savoury and clean with a slight citrus spike. Olive leaf, fresh rosemary and crushed coriander sit above a solid base of juniper. The savoury notes carry on to the palate and are supported by pine needles, white pepper and a textural almond note.
Try batch two of Cousin Vera’s Gin in a dirty martini or a G&T with a sprig of rosemary and lemon.
